Raw and lightly cured fish

Ceviche, poke, crudo and similar dishes are not cooked by heat. Lime juice does not kill parasites or bacteria the way cooking does. The FDA’s guidance is that fish to be eaten raw should be frozen first to kill parasites (for example at -4 °F / -20 °C or below for 7 days, or as the FDA Food Code specifies). Buy fish sold for raw consumption, keep it cold, and serve it the day it is made. People who are pregnant, young children, older adults and anyone with a weakened immune system should choose a cooked version.

Cooling and storage

Refrigerate cooked food within 2 hours (1 hour above 90 °F / 32 °C). Most cooked dishes keep 3 to 4 days in the refrigerator. Reheat leftovers to 165 °F / 74 °C.
