Fried Rice Packet: Easy Foil-Packet Recipe

Fried rice packet is a clever, hands-off way to make a complete meal: seasoned rice, protein, and vegetables are sealed in a foil packet and baked until tender and fragrant. This method steams the rice in its own juices, locking in flavor and making cleanup nearly nonexistent. It’s perfect for camping, busy weeknights, or anytime you want a comforting one-dish dinner with minimal fuss.

Ingredients

  • 1 cup (200 g) long-grain white rice, rinsed
  • 1 cup (240 ml) chicken or vegetable broth
  • 2 tablespoons (30 ml) soy sauce
  • 1 tablespoon (15 ml) sesame oil
  • 1 tablespoon (15 ml) vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 cup (150 g) frozen peas and carrots, thawed
  • 2 green onions, sliced
  • 2 large eggs, beaten
  • 1 cup (150 g) cooked chicken, diced (optional)
  • Salt and pepper to taste
  • 4 large sheets of heavy-duty aluminum foil (about 12×18 inches each)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the broth, soy sauce, sesame oil, vegetable oil, garlic, and ginger.
  3. Divide the rinsed rice evenly among the four foil sheets, placing it in the center of each.
  4. Pour the broth mixture over the rice, dividing it equally among the packets.
  5. Top each portion with the peas and carrots, green onions, and chicken if using. Season with a pinch of salt and pepper.
  6. Fold the foil packets: bring the two long sides together and fold over twice to seal, then fold in the short ends tightly to create a sealed packet. Make sure there is some room for steam inside.
  7. Place the packets on a baking sheet and bake for 30 minutes.
  8. Carefully remove the baking sheet from the oven. Open one packet (watch for steam) and check that the rice is tender and has absorbed the liquid. If not, reseal and bake for 5 more minutes.
  9. While the packets bake, heat a small nonstick skillet over medium heat and scramble the beaten eggs until just set. Set aside.
  10. When the rice is done, carefully open each packet (steam is hot) and fluff the rice with a fork. Stir in the scrambled eggs, taste, and adjust seasoning with salt and pepper.
  11. Serve immediately, directly from the packet or transferred to bowls.

Tips

  • Use heavy-duty foil: Regular foil may tear during folding. If using regular foil, double it up.
  • Don’t skip rinsing the rice: Rinsing removes excess starch, preventing gummy rice.
  • Customize the protein: Use cooked shrimp, pork, or tofu instead of chicken. If using raw meat, increase baking time to 40 minutes and ensure it reaches a safe internal temperature (chicken: 165°F / 74°C; ground meat: 160°F / 71°C).
  • Make it ahead: Assemble the packets (without eggs) and refrigerate for up to 24 hours. Bake as directed, adding 5 minutes to the time.

Serving Suggestions

Serve the fried rice packet as a complete meal, or pair it with a simple cucumber salad, steamed broccoli, or a side of pickled vegetables. For a heartier dinner, add a bowl of hot and sour soup or a few spring rolls.

Variations

  • Vegetarian: Omit the chicken and use vegetable broth. Add extra veggies like bell peppers, corn, or mushrooms.
  • Spicy: Stir in 1-2 teaspoons of sriracha or chili garlic sauce with the soy sauce mixture.
  • Brown rice: Use brown rice, but increase the broth to 1 1/4 cups (300 ml) and bake for 45-50 minutes.
  • Pineapple fried rice: Add 1/2 cup (85 g) diced pineapple and 1 tablespoon (15 ml) fish sauce (omit soy sauce for a gluten-free version) for a tropical twist.

Storage and Reheating

Store leftover fried rice in an airtight container in the refrigerator for up to 3 days. To reheat, sprinkle with a little water and microwave in 30-second bursts, stirring in between, until hot (165°F / 74°C). Alternatively, reheat in a skillet over medium heat with a splash of oil. Freeze for up to 1 month in a freezer-safe container; thaw overnight in the fridge before reheating.

Frequently Asked Questions

Can I use instant rice? Yes, but reduce the broth to 3/4 cup (180 ml) and bake for only 15-20 minutes. Instant rice cooks much faster.

Can I cook these packets on a grill? Absolutely. Place the packets on a preheated grill over medium heat and cook for 30-35 minutes, turning once halfway through.

Why is my rice still crunchy after baking? The foil packet may not have been sealed tightly enough, or the oven temperature was too low. Make sure the packets are well sealed and the oven is fully preheated.

Can I use frozen vegetables without thawing? Yes, just add them frozen. They will steam inside the packet along with the rice.

Is it safe to eat leftover fried rice? Yes, if stored properly within 2 hours of cooking and reheated to 165°F (74°C) before eating. Never leave rice at room temperature for more than 2 hours.

Can I make this in a slow cooker? This recipe is designed for foil packets, but you can adapt it by placing all ingredients in a slow cooker and cooking on low for 2-3 hours, or until rice is tender. Stir occasionally.
