Dinner for Two Menu: Lemon Chicken and Orzo

This dinner for two menu pairs golden lemon chicken thighs with orzo cooked in the same skillet, plus a quick green salad. It makes a balanced, comforting meal with minimal cleanup, and the timings let you serve everything warm together.

Ingredients

  • 2 small bone-in, skin-on chicken thighs, about 12 oz (340 g) total
  • ½ tsp (3 g) fine salt, divided
  • ¼ tsp black pepper (about 0.5 g)
  • 1 tbsp (15 ml) olive oil
  • 1 small shallot, finely chopped, about ¼ cup (40 g)
  • 1 garlic clove, minced, about 1 tsp (5 g)
  • ¾ cup (150 g) dry orzo
  • 1½ cups (360 ml) low-sodium chicken broth
  • ½ tsp (1 g) dried oregano
  • 1 lemon: finely grated zest and 1 tbsp (15 ml) juice
  • 2 tbsp (30 ml) water, plus more if needed
  • 2 tbsp (8 g) chopped fresh parsley
  • 1 oz (28 g) baby spinach
  • 2 cups (60 g) mixed salad greens
  • ½ cup (75 g) cucumber, thinly sliced
  • ½ cup (75 g) cherry tomatoes, halved
  • 1 tbsp (15 ml) red wine vinegar
  • 1 tbsp (15 ml) olive oil for the salad
  • 2 tbsp (20 g) crumbled feta, optional

Instructions

  1. Pat the chicken thighs dry with paper towels. Season all over with ¼ tsp (1.5 g) salt and the black pepper. Prepare the salad vegetables while the chicken rests briefly at room temperature; do not leave raw chicken out for more than 2 hours.
  2. Heat 1 tbsp olive oil in a medium, lidded skillet over medium heat. Place the thighs skin-side down and cook undisturbed for 7–9 minutes, until the skin is deeply golden and some fat has rendered. Turn and cook for 2 minutes. Transfer to a clean plate; the chicken will finish cooking later.
  3. Pour off all but about 1 tbsp (15 ml) fat from the skillet. Add the shallot and cook for 2 minutes, stirring, until softened. Stir in the garlic for 30 seconds, then add the orzo and oregano. Toast for 1 minute, stirring so the pasta is coated and does not scorch.
  4. Pour in the broth and 2 tbsp water, scraping up browned bits from the pan. Stir in the remaining ¼ tsp salt and half the lemon zest. Bring to a gentle simmer. Return the chicken to the skillet, skin-side up, and cover. Reduce the heat to low and cook for 15–18 minutes, stirring the orzo once around the chicken, until the pasta is tender and the chicken reaches the USDA FSIS safe minimum internal temperature of 165°F (74°C) at its thickest point, checked with a food thermometer without touching bone.
  5. Move the chicken to a clean plate. Stir the spinach, lemon juice, remaining zest and parsley into the orzo until the spinach wilts, about 1 minute. If the pasta seems dry before it is tender, add hot water 1 tbsp (15 ml) at a time. Rest the chicken for 3 minutes while you finish the salad.
  6. Whisk the salad vinegar and remaining 1 tbsp olive oil in a bowl. Add the greens, cucumber and tomatoes and toss just before serving. Divide the orzo between two plates, set a chicken thigh on each, and serve the salad alongside. Scatter feta over the salad if using.

Tips

  • Choose thighs of similar size so they cook at about the same rate. If one is noticeably thicker, check its temperature first and continue cooking as needed; color alone cannot confirm safety.
  • Keep the skillet at a gentle simmer after adding the broth. A hard boil can make the orzo stick or cook unevenly, while a little added hot water helps if the pan becomes dry.
  • For boneless, skinless thighs, brown them for about 3 minutes per side, then start checking temperature after 10 minutes covered. The orzo may need a few extra minutes; cook the chicken to 165°F (74°C).
  • Use low-sodium broth so the dish does not become too salty as the liquid reduces. If using regular broth, reduce the added salt and taste the orzo before serving.

Serving Suggestions

The skillet already includes pasta and greens, so the dressed salad completes the meal without another cooked side. Warm crusty bread is useful for the lemony pan juices, or add a few olives to the salad for a briny note. For a simple dessert, serve sliced fruit or a small scoop of sorbet after dinner.

Variations

For a meat-free menu, replace the chicken with 8 oz (225 g) sliced cremini mushrooms. Brown them for 6–8 minutes, remove them, then proceed with the shallot and orzo; stir the mushrooms back in with the spinach. Use vegetable broth. The dish will have a softer, savory profile rather than the crisp-skin contrast of chicken.

For a richer finish, stir 2 tbsp (30 ml) cream into the orzo with the spinach. You can also use baby kale instead, allowing an extra minute or two to wilt it. If fresh parsley is unavailable, use 1 tsp (1 g) dried parsley or finish with chopped chives; the fresh herbs provide a brighter flavor.

Storage and Reheating

Refrigerate leftovers within 2 hours of cooking in a covered, shallow container. Store chicken and orzo for 3–4 days; dressed salad greens are best eaten immediately and do not keep well once tossed. For longer storage, freeze the chicken and orzo in an airtight freezer-safe container for up to 2 months. The orzo may soften after thawing.

Reheat only the portion you plan to eat. Warm the chicken and orzo in a covered skillet over low heat with 1–2 tbsp (15–30 ml) water, stirring the pasta and turning the chicken occasionally, until steaming hot throughout and at least 165°F (74°C). You can also microwave in a covered microwave-safe dish, stirring the orzo halfway through and checking the temperature in several places. Do not reheat the salad.

Frequently Asked Questions

Can I make this dinner with chicken breasts?
Yes. Use two small boneless breasts, brown them for about 3 minutes per side, and remove them while the orzo cooks. Return them to the skillet near the end to finish gently, checking that the center reaches 165°F (74°C). Breast size affects timing, so use a thermometer rather than relying on the clock.

Can I use rice instead of orzo?
Rice needs a different amount of liquid and a longer cooking time, so it is not a direct swap in this method. For a similar one-pan dinner, use a recipe specifically written for rice, or cook rice separately and serve the lemon chicken and skillet vegetables over it.

Can I prepare any part ahead?
You can chop the shallot, garlic, salad vegetables and parsley up to a day ahead and refrigerate them separately. Keep the salad greens dry, and season and brown the chicken just before cooking for the best texture. Toss the salad at the last minute.

Why is my orzo still firm when the broth is gone?
Skillets and burners vary, and the orzo may absorb liquid at different rates. Stir in hot water 1 tbsp (15 ml) at a time, cover again, and cook until tender. Keep the heat low to prevent the pasta from sticking while it finishes.

Is the chicken skin meant to stay crisp?
The skin is browned first, but simmering it covered with the orzo softens it. For crisper skin, cook the thighs skin-side down until fully cooked in a separate skillet, then serve them on top of the finished orzo. Confirm the chicken reaches 165°F (74°C).
