Volcano steak and sushi is a restaurant-style plate of seared steak served with sushi rice and a warm, spicy seafood topping, often finished until bubbling. This approachable version uses cooked shrimp, imitation crab and a creamy chile sauce, so you can make the dramatic dish at home without handling raw fish.
Ingredients
- 1 cup (200 g) sushi rice
- 1¼ cups (300 ml) water, for cooking the rice
- 2 tablespoons (30 ml) unseasoned rice vinegar
- 1 tablespoon (12 g) granulated sugar
- ½ teaspoon fine salt (3 g), divided
- 1 pound (450 g) boneless beef sirloin or strip steak, about 1 inch (2.5 cm) thick
- 1 tablespoon (15 ml) neutral oil, such as canola
- 8 ounces (225 g) cooked shrimp, peeled, deveined and chopped
- 4 ounces (115 g) imitation crab, chopped
- ⅓ cup (80 g) mayonnaise
- 1 tablespoon (15 ml) sriracha, plus more to taste
- 1 teaspoon (5 ml) soy sauce
- 1 teaspoon (5 ml) toasted sesame oil
- 2 scallions, thinly sliced (about 20 g)
- 1 teaspoon (3 g) toasted sesame seeds
- 1 nori sheet, cut into thin strips (optional)
Instructions
- Rinse and cook the rice. Put the sushi rice in a bowl, cover with cool water and swish it around; drain and repeat four or five times, until the water is less cloudy. Drain well. Combine the rice and 1¼ cups (300 ml) water in a saucepan. Bring to a boil, cover, reduce the heat to low and cook for 15 minutes. Remove from the heat and leave covered for 10 minutes. Alternatively, follow the water ratio and settings for your rice cooker.
- Season the rice. While it cooks, stir the rice vinegar, sugar and ¼ teaspoon salt together until dissolved. Transfer the hot rice to a wide bowl and gently fold in the vinegar mixture with a rice paddle or spatula. Avoid crushing the grains. Keep the rice covered with a clean, slightly damp towel while you prepare the rest.
- Make the volcano topping. Heat the oven to 425°F (220°C). In a bowl, combine the chopped cooked shrimp, imitation crab, mayonnaise, sriracha, soy sauce and sesame oil. Stir just until coated. Divide among four small oven-safe ramekins, or place in one small oven-safe dish. Set aside while you cook the steak; it should not sit out for more than two hours.
- Season the steak. Pat the steak dry. Season both sides with the remaining ¼ teaspoon salt and a few grinds of black pepper, if desired. Let it stand at room temperature for about 10 minutes while a heavy skillet heats; this short tempering is optional, but do not leave meat out longer than two hours.
- Sear the steak. Heat a cast-iron or other heavy skillet over medium-high heat until very hot, then add the neutral oil. Sear the steak for about 3–5 minutes per side, depending on thickness and desired doneness. Check the center with a food thermometer: USDA FSIS safe minimum for whole cuts of beef is 145°F (63°C), followed by a 3-minute rest. Transfer to a clean plate and rest for 3 minutes before slicing thinly across the grain. Use a clean knife and board, not the ones used for raw beef.
- Heat the topping. Bake the seafood mixture for 8–10 minutes, until hot throughout and bubbling at the edges. Because the shrimp is already cooked, this step warms and browns the topping rather than cooking raw seafood. If using one larger dish, allow a few extra minutes and check that the center is hot. Do not broil in a glass dish unless its manufacturer says it is broiler-safe.
- Assemble and serve. Divide the seasoned rice among four bowls or plates. Arrange sliced steak alongside or over the rice, then spoon on the hot seafood topping. Scatter with scallions, sesame seeds and optional nori strips. Serve straight away while the topping is warm.
Tips
- Choose the steak thickness thoughtfully. A steak around 1 inch thick sears well without burning before the center warms. Very thick cuts need longer at lower heat; rely on a thermometer rather than the clock alone.
- Use real crab if you prefer. Substitute 4 ounces (115 g) cooked lump crab for imitation crab. It gives a sweeter, more delicate seafood flavor and tends to cost more; check carefully for shell fragments.
- Adjust the heat gradually. Sriracha varies in intensity. Start with 1 tablespoon, then add more before baking. For a milder topping, use 1–2 teaspoons and add a little extra mayonnaise.
- Keep the rice tender. Don’t refrigerate the rice before serving if you can avoid it; cold rice firms up. If making it slightly ahead, cover it at room temperature and use it within two hours, or keep it warm according to your rice cooker’s instructions.
Serving Suggestions
Serve the steak and topping with cucumber salad, edamame, or lightly dressed shredded cabbage to balance the rich sauce. Pickled ginger and a small dish of soy sauce make useful accompaniments, though the seasoned rice and topping are already flavorful. For a plated presentation, shape the rice into a mound, fan the steak beside it and add the seafood mixture on top or in a ramekin.
Variations
For a bowl with more vegetables, add sliced avocado or cucumber just before serving; keep them out of the oven. Swap the steak for boneless chicken thighs, but cook poultry to the USDA FSIS safe minimum internal temperature of 165°F (74°C), checking the thickest part with a thermometer. For a meat-free option, use seared firm tofu and replace the seafood topping with chopped roasted mushrooms and cooked corn, keeping the same sauce. Imitation crab is commonly used in restaurant-style versions; cooked crab or chopped cooked scallops are alternatives, but scallops should reach 145°F (63°C) if starting raw.
Storage and Reheating
For safety and best texture, store rice, steak and seafood topping separately in shallow, covered containers and refrigerate within two hours of cooking. Keep at 40°F (4°C) or colder and use within 3–4 days. Reheat leftovers to 165°F (74°C), checking with a food thermometer. Warm the topping in a covered oven-safe dish at 350°F (175°C) until it reaches that temperature; reheat steak gently in a skillet or microwave, since prolonged heating can make it tough. Reheat rice with a splash of water, covered, until steaming hot and at 165°F (74°C). Discard any food left at room temperature for more than two hours, or one hour when the temperature is above 90°F (32°C).
Frequently Asked Questions
What is volcano steak and sushi?
It is a restaurant-style combination of steak, sushi rice and a spicy, creamy seafood topping, usually warmed until bubbling. Recipes vary, and the name describes the dramatic hot topping rather than one fixed traditional preparation.
Can I make the topping without an oven?
Yes. Put it in a small covered skillet over low heat and stir gently until steaming hot throughout. It will be creamy and warm rather than browned on top; don’t let the mayonnaise sauce boil vigorously.
Can I make the components ahead?
You can mix the seafood topping and refrigerate it, covered, for up to a day, then bake it until hot throughout. Steak is best cooked just before serving. Rice also tastes best freshly made; if prepared ahead, cool and refrigerate it promptly, then reheat to 165°F (74°C).
Is imitation crab already cooked?
Most imitation crab is cooked during processing and sold ready to eat, but check the package instructions. In this recipe it is warmed with the other topping ingredients; it is not a substitute for raw crab in dishes that call for uncooked seafood.
How do I know when the steak is safe?
Check the thickest part with a food thermometer. USDA FSIS recommends 145°F (63°C) for whole cuts of beef, followed by a 3-minute rest. Color alone is not a reliable temperature check.
Can I serve this as sushi rolls?
The rice and topping can be used for hand rolls, but this recipe is designed as a hot bowl or plate. For rolls, let the topping cool to warm, use nori sheets and avoid overfilling; keep cooked seafood chilled until assembly and refrigerate leftovers promptly.
