Sate Ayam Recipe (Indonesian Chicken Satay)

Sate Ayam is Indonesia’s beloved street food: tender, marinated chicken skewers grilled over charcoal and served with a rich, nutty peanut sauce. This version is genuinely useful because it works on a standard home grill or grill pan, uses accessible ingredients, and delivers the same sweet-savory balance as the classic. The chicken stays juicy thanks to a quick marinade, and the sauce comes together in minutes.

Ingredients

  • 1.5 lb (680 g) boneless, skinless chicken thighs, cut into 1-inch (2.5 cm) cubes
  • 12-16 bamboo skewers, soaked in water for 30 minutes
  • For the marinade:
  • 3 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp (15 ml) sweet soy sauce (kecap manis)
  • 1 tbsp (15 ml) regular soy sauce
  • 1 tbsp (15 ml) lime juice
  • 1 tsp (5 g) ground coriander
  • 1 tsp (5 g) ground cumin
  • 1/2 tsp (2.5 g) turmeric
  • 1/2 tsp (2.5 g) salt
  • 1/4 tsp (1 g) white pepper
  • 2 tbsp (30 ml) vegetable oil
  • For the peanut sauce:
  • 1 cup (240 ml) water
  • 1/2 cup (130 g) smooth peanut butter
  • 2 tbsp (30 ml) sweet soy sauce (kecap manis)
  • 1 tbsp (15 ml) lime juice
  • 1 tsp (5 g) brown sugar
  • 1 clove garlic, minced
  • 1/2 tsp (2.5 g) chili paste (sambal oelek) or to taste
  • Optional garnish: sliced shallots, chopped peanuts, lime wedges

Instructions

  1. In a large bowl, combine all marinade ingredients: shallots, garlic, sweet soy sauce, regular soy sauce, lime juice, coriander, cumin, turmeric, salt, white pepper, and vegetable oil. Add the chicken cubes and toss well to coat. Cover and refrigerate for at least 1 hour, or up to 4 hours for deeper flavor.
  2. While the chicken marinates, soak bamboo skewers in water for at least 30 minutes to prevent burning.
  3. Make the peanut sauce: In a small saucepan over medium heat, combine water, peanut butter, sweet soy sauce, lime juice, brown sugar, garlic, and chili paste. Whisk until smooth and heated through, about 5 minutes. If too thick, add a little more water. Keep warm.
  4. Preheat grill or grill pan to medium-high heat (about 375°F / 190°C). Thread 4-5 chicken cubes onto each skewer, pressing them together slightly.
  5. Grill skewers for 4-5 minutes per side, turning once, until the chicken is cooked through and has nice char marks. The safe minimum internal temperature for chicken is 165°F (74°C) as measured with a food thermometer.
  6. Remove from grill and let rest for 2-3 minutes. Serve hot with peanut sauce on the side or drizzled over the top.

Tips

  • If you can’t find kecap manis, substitute with 1 tbsp (15 ml) molasses mixed with 1 tbsp (15 ml) soy sauce. This will be slightly less sweet but close.
  • Don’t skip soaking the skewers—dry bamboo will catch fire on the grill.
  • For extra tenderness, use chicken thighs instead of breast; they stay moist during grilling.
  • If using a charcoal grill, wait until the coals are covered with white ash for even heat.

Serving Suggestions

Serve sate ayam with steamed jasmine rice or lontong (compressed rice cakes). Add a side of cucumber and shallot salad with a splash of vinegar, and extra lime wedges for squeezing. It’s also great with a simple cucumber and pineapple relish.

Variations

For a spicier version, add more chili paste or a chopped fresh bird’s eye chili to the marinade. You can also substitute chicken with beef (use sirloin, cook to 145°F / 63°C with a 3-minute rest) or tofu (skip the marinade, just brush with sauce). Some regions add a splash of coconut milk to the peanut sauce for creaminess—try it if you like.

Storage and Reheating

Refrigerate leftover skewers and sauce separately in airtight containers for up to 3 days. To reheat, warm the skewers in a 350°F (175°C) oven for 8-10 minutes, or until heated through to 165°F (74°C). Reheat the sauce on the stovetop with a splash of water to loosen it. Freeze cooked skewers for up to 2 months; thaw overnight in the fridge before reheating.

Frequently Asked Questions

Can I use chicken breast instead of thighs? Yes, but breast cooks faster and can dry out. Pound it slightly and reduce grilling time to 3-4 minutes per side, checking temperature early.

What is kecap manis and where can I find it? It’s a sweet soy sauce from Indonesia, thicker and molasses-like. Find it in Asian grocery stores or online. If unavailable, use the substitute in Tips.

Can I make the peanut sauce ahead? Yes, up to 3 days in advance. Store in the fridge and reheat gently with a little water to restore consistency.

Do I need to use a grill? No, a grill pan or even a cast-iron skillet works. Cook over medium-high heat, and you can also broil in the oven on a baking sheet for 6-8 minutes, turning once.

Why is my chicken tough? Overcooking is the usual culprit. Use a thermometer and pull the skewers off at 165°F (74°C). Marinating longer also helps.

Can I freeze the marinated raw chicken? Yes, freeze in a zip-top bag with the marinade for up to 3 months. Thaw overnight in the fridge, then thread and grill.
