Air Fryer Veggie Pakora Recipe (Crispy, Easy)

Veggie pakoras are a beloved Indian snack of spiced vegetables coated in a chickpea flour batter and fried until golden. This air fryer version delivers the same crispy exterior and tender, flavorful interior with far less oil, making it a lighter weeknight treat or appetizer. Using a hot air fryer and a few simple tricks, you get perfectly crunchy pakoras that are ready in about 30 minutes.

Ingredients

  • 1 cup (120 g) chickpea flour (besan)
  • 2 tablespoons (15 g) rice flour (or cornstarch)
  • 1 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon ajwain (carom seeds) – optional
  • 1/2 cup (120 ml) water, plus more as needed
  • 1 cup (150 g) finely chopped onion (about 1 medium)
  • 1 cup (150 g) finely chopped potato (about 1 medium, peeled)
  • 1 cup (100 g) finely chopped cauliflower (about 1/2 small head)
  • 1/2 cup (60 g) fresh spinach, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon oil (for brushing)

Instructions

  1. In a large bowl, whisk together the chickpea flour, rice flour, salt, turmeric, cumin, coriander, chili powder, and ajwain (if using).
  2. Add the water gradually, whisking to form a thick, smooth batter. It should be thick enough to coat a spoon but still drop off easily. If too thick, add a little more water; if too thin, add a bit more chickpea flour.
  3. Stir in the chopped onion, potato, cauliflower, spinach, and lemon juice. Mix well until all vegetables are evenly coated with the batter. Let the mixture sit for 5 minutes – this helps the vegetables release moisture and the batter thicken.
  4. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  5. Lightly brush the air fryer basket with oil or use a non-stick spray.
  6. Scoop heaping tablespoons of the vegetable mixture and drop them into the basket, leaving space between each pakora – do not overcrowd. You may need to cook in batches.
  7. Lightly brush the tops of the pakoras with oil (or spray with oil).
  8. Air fry at 375°F (190°C) for 8 minutes. Then flip each pakora carefully with a spatula and air fry for another 5–7 minutes, until golden brown and crispy all over.
  9. Check for doneness: the pakoras should be firm and golden. If you prefer extra crispiness, air fry for an additional 2 minutes.
  10. Remove and serve hot with chutney or ketchup.

Tips

  • Don’t skip the rice flour: It helps create a crispier coating. If you don’t have it, use cornstarch or all-purpose flour as a substitute.
  • Chop vegetables finely: Evenly sized, small pieces ensure they cook through at the same rate as the batter.
  • Let the batter rest: The 5-minute rest allows the chickpea flour to hydrate fully, preventing a raw flour taste.
  • Avoid overcrowding: Leave space between pakoras in the air fryer basket so hot air circulates and they crisp evenly. Cook in batches if needed.

Serving Suggestions

Serve these pakoras hot with mint chutney, tamarind chutney, or ketchup. They also pair well with a cup of masala chai for a classic snack. For a heartier meal, tuck them into a wrap with fresh salad and yogurt sauce.

Variations

  • Paneer Pakora: Add 1/2 cup (75 g) of cubed paneer to the batter for a richer version.
  • Onion Pakora: Use only 2 cups (300 g) of thinly sliced onions and skip the other vegetables.
  • Spicy Version: Add 1 finely chopped green chili and 1 teaspoon of ginger-garlic paste to the batter.
  • Gluten-Free: Ensure your chickpea flour and rice flour are certified gluten-free – they naturally are, but check for cross-contamination.

Storage and Reheating

Store leftover pakoras in an airtight container in the refrigerator for up to 3 days. To reheat, place them in the air fryer at 350°F (175°C) for 3–4 minutes until hot and crispy. Avoid microwaving, as it makes them soggy.

Frequently Asked Questions

Can I use frozen vegetables? Yes, but thaw and squeeze out excess moisture before mixing with the batter. Frozen spinach should be well-drained.

Why are my pakoras falling apart? The batter might be too thin or the vegetables too wet. Add a little more chickpea flour to thicken, and ensure vegetables are patted dry.

Can I make the batter ahead of time? It’s best to make it fresh, as the vegetables release water and make the batter runny. If you must, store the dry mix separately and add water when ready to cook.

Do I need to preheat the air fryer? Yes, preheating ensures even cooking and a crispier exterior. Most air fryers take 3–5 minutes to preheat.

Can I use oil spray instead of brushing? Yes, a light spray of oil works well. Just ensure you use a spray that is suitable for air fryers.

How do I know when they are done? The pakoras should be golden brown and firm to the touch. If you’re unsure, cut one open – the vegetables should be tender, not raw.
