Dulce Brioche Bread: Sweet Mexican Brioche Recipe

Dulce brioche bread is a soft, sweet, and slightly enriched yeast bread that originated in Mexico, often enjoyed as a breakfast treat or with coffee. It is similar to a brioche but sweeter and often shaped into a loaf or rolls, with a tender crumb and a golden, glossy crust. This recipe yields a beautifully fluffy bread that is perfect for toasting, making French toast, or simply eating warm with butter.

Ingredients

  • 4 cups (500 g) all-purpose flour, plus more for dusting
  • 1/2 cup (100 g) granulated sugar
  • 2 1/4 tsp (7 g) instant yeast (one packet)
  • 1 tsp salt
  • 3 large eggs, at room temperature
  • 1/2 cup (120 ml) whole milk, warm (about 110°F / 43°C)
  • 1/2 cup (115 g) unsalted butter, softened, plus extra for greasing
  • 1 tsp vanilla extract
  • For the egg wash: 1 large egg beaten with 1 tbsp water
  • Optional: coarse sugar or pearl sugar for sprinkling

Instructions

  1. In a large mixing bowl or the bowl of a stand mixer, whisk together the flour, sugar, yeast, and salt.
  2. Add the eggs, warm milk, and vanilla. If using a stand mixer, use the paddle attachment to mix on low speed until a shaggy dough forms.
  3. Switch to the dough hook. Add the softened butter in pieces, mixing on medium-low speed until the butter is incorporated and the dough is smooth and elastic, about 8–10 minutes. The dough will be soft and slightly sticky but should pull away from the sides of the bowl.
  4. Turn the dough out onto a lightly floured surface and knead by hand for 2–3 minutes until it forms a smooth ball. Place the dough in a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let rise in a warm place until doubled in size, about 1 1/2 to 2 hours.
  5. Punch down the dough to release air. Turn it out onto a floured surface and shape into a loaf (or divide into 12 equal pieces for rolls). Place the loaf in a greased 9×5-inch (23×13 cm) loaf pan, or arrange the rolls in a greased 9×13-inch (23×33 cm) baking dish.
  6. Cover loosely with plastic wrap or a towel and let rise again until puffy and almost doubled, about 45 minutes to 1 hour.
  7. Preheat the oven to 350°F (175°C). Brush the top of the bread gently with the egg wash. If using, sprinkle with coarse sugar.
  8. Bake for 35–40 minutes, until the top is deep golden brown and the bread sounds hollow when tapped. If you have an instant-read thermometer, the internal temperature should read 190°F (88°C) for a fully baked enriched bread. (Note: The USDA FSIS safe minimum for egg-containing breads is 160°F (71°C), but for best texture, aim for 190°F.)
  9. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Tips

  • Yeast: If using active dry yeast instead of instant, dissolve it in the warm milk with a pinch of sugar and let it foam for 5–10 minutes before adding to the dry ingredients.
  • Butter: Make sure the butter is truly softened to room temperature, not melted, so it incorporates smoothly into the dough. If the dough seems too sticky after adding the butter, add a tablespoon of flour at a time until it comes together.
  • Rising: If your kitchen is cool, let the dough rise in a slightly warm oven (turn it on to 200°F / 95°C for 2 minutes, then turn off) or in a sunny spot. The dough should double in size, but don’t let it over-rise or the bread may collapse.
  • Storage: Store the baked bread in an airtight container at room temperature for up to 3 days. Do not refrigerate, as that dries out the crumb.

Serving Suggestions

Serve dulce brioche warm or toasted with butter and a drizzle of honey or jam. It also makes excellent French toast or bread pudding. For a Mexican twist, spread with cajeta (goat’s milk caramel) or sprinkle with cinnamon sugar.

Variations

  • Chocolate Dulce Brioche: Add 1/2 cup (90 g) of mini chocolate chips to the dough after kneading.
  • Orange Zest: Add the zest of one orange to the dry ingredients for a citrusy aroma.
  • Rolls: Shape the dough into 12 rolls instead of a loaf, and reduce baking time to 20–25 minutes.
  • Glaze: Instead of egg wash, brush the baked bread with a simple syrup (1/4 cup sugar dissolved in 1/4 cup water) for a shiny, sweet crust.

Storage and Reheating

Store the bread in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly in plastic wrap and freeze for up to 2 months. To reheat, thaw at room temperature if frozen, then warm slices in a toaster or in a 300°F (150°C) oven for 5–10 minutes.

Frequently Asked Questions

Can I use bread flour instead of all-purpose? Yes, bread flour will give a slightly chewier texture, but all-purpose works well for a tender crumb.

Why did my dough not rise? The yeast may be expired, or the milk was too hot (above 120°F / 49°C) and killed the yeast. Check the temperature and use fresh yeast.

Can I make this dairy-free? Substitute the butter with vegan butter or coconut oil, and use almond or oat milk instead of whole milk. The texture will be slightly different but still delicious.

Can I make the dough ahead of time? Yes, after the first rise, punch down the dough, cover tightly, and refrigerate overnight. The next day, let it come to room temperature for about 30 minutes before shaping and proceeding with the second rise.

How do I know when the bread is done? The top should be deep golden brown, and the bread should sound hollow when tapped. An instant-read thermometer inserted into the center should read 190°F (88°C).

Can I add raisins or nuts? Absolutely. Fold in 1/2 cup of raisins or chopped nuts after kneading, just before the first rise.
