Ingredients:

🛒 For the Beef & Marinade:

  • 2 lbs beef (chuck or short ribs), cut into cubes
  • 2 tbsp soy sauce
  • 1 tbsp calamansi or lemon juice
  • ½ tsp salt
  • ½ tsp black pepper

🛒 For the Stew:

  • 2 tbsp cooking oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • 1 ½ cups beef broth (or water)
  • 1 large carrot, sliced
  • 1 large potato, cubed
  • ½ cup green peas
  • ½ cup red bell pepper, sliced
  • ½ cup green bell pepper, sliced
  • 1-2 chili peppers (optional for spice)
  • ½ cup liver spread (or pâté)
  • 1 tbsp fish sauce (patis) or salt to taste
  • 1 tsp sugar (optional)
  • ½ cup grated cheese (for extra richness)

Instructions:

1️⃣ . Marinate the Beef: In a bowl, mix the beef with soy sauce, calamansi juice, salt, and black pepper. Let it marinate for at least 30 minutes.

2️⃣ . Sear the Beef: Heat oil in a pot over medium heat. Brown the marinated beef on all sides, then remove and set aside.

3️⃣ . Sauté the Aromatics: In the same pot, sauté onions and garlic until fragrant. Add tomato paste and cook for 1-2 minutes to deepen the flavor.

4️⃣ . Simmer the Stew: Pour the tomato sauce and beef broth, then add the browned beef. Cover and simmer for 1-2 hours or until the meat is fork-tender.

5️⃣ . Add the Veggies & Flavor: Stir in carrots, potatoes, and chili peppers (if using). Cook for 10 minutes, then add bell peppers, green peas, liver spread, and cheese. Simmer for another 5 minutes.
