Bobotie is a classic South African comfort food: a spiced minced meat bake topped with a golden, savory custard. Using an air fryer cuts the cooking time and delivers a beautifully browned top without heating up your whole kitchen. This version keeps the traditional flavors—curry, dried fruit, and a creamy egg topping—while simplifying the method for a weeknight-friendly meal.
Ingredients
- 1 tbsp (15 ml) olive oil
- 1 medium onion, finely chopped (about 1 cup / 150 g)
- 2 garlic cloves, minced
- 1 lb (450 g) ground beef (or ground lamb)
- 1 tbsp (6 g) curry powder (mild or medium)
- 1 tsp (2 g) ground turmeric
- 1 tsp (2 g) ground coriander
- 1 tsp (5 g) salt, plus more to taste
- 1/2 tsp (1 g) black pepper
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (15 ml) chutney (apricot or mango, or use 1 tbsp / 15 g brown sugar)
- 1/2 cup (80 g) raisins or sultanas
- 1 slice white bread, crusts removed, soaked in 1/4 cup (60 ml) milk
- 1 bay leaf
- For the topping:
- 1 cup (240 ml) milk
- 2 large eggs
- 1/2 tsp (1 g) ground turmeric
- 1/4 tsp (0.5 g) salt
- 2–3 fresh or dried bay leaves (for garnish)
Instructions
- Preheat your air fryer to 350°F (175°C) for 3–5 minutes.
- In a large skillet over medium heat, warm the olive oil. Add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute more.
- Add the ground beef to the skillet. Cook, breaking it up with a spoon, until browned and no longer pink, about 8–10 minutes. Drain off any excess fat if needed.
- Stir in the curry powder, turmeric, coriander, salt, and pepper. Cook for 1 minute until fragrant.
- Remove the skillet from heat. Stir in the lemon juice, chutney (or sugar), and raisins.
- Squeeze the soaked bread to remove excess milk, then add the bread to the meat mixture. Mix well. Taste and adjust seasoning if needed.
- Transfer the meat mixture to a 7-inch (18 cm) round baking dish that fits inside your air fryer basket. Press it down evenly. Place the bay leaf on top.
- In a small bowl, whisk together the milk, eggs, turmeric, and salt until well combined. Pour this custard over the meat mixture.
- Place the dish in the air fryer basket. Cook at 350°F (175°C) for 20–25 minutes, until the custard is set and the top is golden brown. The internal temperature of the meat mixture should reach 160°F (71°C) (USDA FSIS safe minimum for ground meat). Check with a food thermometer inserted into the center.
- Let the bobotie rest for 5 minutes before serving. Remove the bay leaf before eating.
Tips
- Use a dish that fits: Measure your air fryer basket before choosing a baking dish. A 7-inch (18 cm) round or a small loaf pan works for most models. If your dish is deeper, you may need to add 5–10 minutes to the cooking time.
- Don’t skip the bread: The soaked bread acts as a binder and gives bobotie its characteristic soft texture. If you’re gluten-free, use a gluten-free bread slice or 1/4 cup (30 g) of almond flour.
- Watch the custard: The topping should be just set with a slight wobble in the center. Overcooking makes it rubbery. If the top is browning too fast, cover loosely with foil for the last 5 minutes.
- Make it ahead: You can assemble the bobotie (without the custard) up to a day in advance. Cover and refrigerate, then pour the custard over just before air frying. Add 5–10 minutes to the cooking time if starting from cold.
Serving Suggestions
Serve bobotie with yellow rice (rice cooked with turmeric and raisins), a fresh green salad, or roasted vegetables. It also pairs well with chutney or a dollop of plain yogurt to balance the spices.
Variations
- Lamb or turkey: Substitute ground lamb for a richer flavor, or ground turkey for a lighter option. If using turkey, add 1 tablespoon of olive oil to the meat mixture to keep it moist.
- Add nuts: Stir in 1/4 cup (30 g) of slivered almonds or chopped cashews with the raisins for extra crunch.
- Spicy version: Use hot curry powder or add a finely chopped chili pepper along with the garlic for more heat.
- Vegetarian: Replace the meat with 2 cups (300 g) of cooked lentils or a plant-based ground meat substitute. Cook the lentils with the spices and proceed as directed; the custard will still set.
Storage and Reheating
Refrigerate leftovers within 2 hours of cooking. Bobotie keeps in the fridge for up to 3–4 days. To reheat, place a portion in the air fryer at 300°F (150°C) for 5–7 minutes, or microwave individual servings in 30-second bursts until hot. The custard may soften slightly upon reheating. You can also freeze bobotie (without the custard) for up to 3 months; thaw overnight in the fridge, add fresh custard, and air fry as directed.
Frequently Asked Questions
Can I use a larger air fryer? Yes, just ensure the baking dish fits with at least 1 inch (2.5 cm) of space around it for air circulation. If your air fryer is larger, the cooking time may be slightly shorter—check at 15 minutes.
Why is my custard not setting? The custard may not have cooked long enough, or the dish might be too deep. Make sure the custard reaches 160°F (71°C) in the center. If it’s still runny after 25 minutes, continue cooking in 2-minute increments until set.
Can I omit the raisins? Yes, raisins add sweetness, but you can replace them with chopped dried apricots, or omit them altogether for a less sweet version. You may want to add a teaspoon of sugar to balance the curry.
What is chutney and where can I find it? Chutney is a sweet and tangy condiment made from fruit, vinegar, and spices. Look for “fruit chutney or “apricot chutney in the condiment aisle. If you can’t find it, use 1 tablespoon of brown sugar plus 1 teaspoon of vinegar.
Can I make this without an air fryer? Absolutely. Bake in a conventional oven preheated to 350°F (175°C) for 30–35 minutes, until the custard is set and the meat reaches 160°F (71°C).
Is bobotie traditionally served hot or cold? In South Africa, bobotie is usually served hot, but it’s also enjoyed cold the next day. The flavors often meld and deepen after a night in the fridge.
