Lentil moussaka is a Greek-inspired vegetarian bake layered with aubergine, a warmly spiced tomato-and-lentil sauce and a creamy cheese-topped béchamel. This UK-friendly version uses easy-to-find ingredients and holds together well after resting, making it satisfying enough for a meat-free main meal.
Ingredients
- 2 large aubergines (about 700 g total), cut lengthways into 1 cm slices
- 3 tbsp olive oil (45 ml), divided, plus a little for the dish
- 1 medium onion (about 150 g), finely chopped
- 1 medium carrot (about 100 g), finely diced
- 2 garlic cloves, finely chopped
- 1 tsp ground cinnamon (2 g)
- 1 tsp dried oregano (1 g)
- 1 tbsp tomato purée (15 g)
- 1 x 400 g tin chopped tomatoes (about 1¾ cups)
- 1 x 400 g tin green or brown lentils (about 240 g drained), drained and rinsed
- 120 ml (½ cup) vegetable stock
- 1 tsp red wine vinegar (5 ml)
- ½ tsp fine salt (3 g), plus salt for the aubergines
- ¼ tsp black pepper (about 0.5 g)
- 40 g (3 tbsp) unsalted butter
- 40 g (⅓ cup) plain flour
- 500 ml (2 cups plus 2 tbsp) whole milk, warmed
- ¼ tsp freshly grated nutmeg (about 0.5 g)
- 75 g (¾ cup) finely grated mature Cheddar or Kefalotyri cheese, divided
- 1 large egg, lightly beaten
Instructions
- Salt and roast the aubergine. Heat the oven to 220°F? No—heat to 425°F (220°C), or 400°F (200°C) fan. Lay the aubergine slices on baking trays, sprinkle lightly with salt and leave for 10 minutes. Pat dry with kitchen paper, brush both sides with about 2 tbsp (30 ml) olive oil, and arrange in a single layer. Roast for 20–25 minutes, turning once, until tender and lightly browned. Work in batches if needed. Set aside and reduce the oven to 375°F (190°C), or 350°F (180°C) fan.
- Make the lentil sauce. While the aubergine roasts, heat the remaining 1 tbsp (15 ml) olive oil in a saucepan over medium heat. Add the onion and carrot and cook for 6–8 minutes, stirring, until softened. Stir in the garlic, cinnamon and oregano for 30 seconds, then add the tomato purée and cook for 1 minute.
- Tip in the chopped tomatoes, drained lentils, stock, vinegar, salt and pepper. Bring to a gentle simmer and cook uncovered for 15–18 minutes, stirring occasionally, until thick but still moist. Taste and adjust the seasoning. If the sauce looks dry before it thickens, add a splash of water.
- Make the béchamel. Melt the butter in a saucepan over medium-low heat. Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the warm milk, a little at a time, until smooth. Bring to a gentle simmer and cook for 4–6 minutes, whisking often, until thick enough to coat the back of a spoon. Remove from the heat; stir in the nutmeg and 50 g (½ cup) of the cheese. Let it cool for 5 minutes, then whisk in the beaten egg. Add the egg off the heat so it does not scramble.
- Layer the moussaka. Lightly oil a deep baking dish, roughly 23 x 33 cm (9 x 13 inches). Arrange half the aubergine in the base, spread over all the lentil sauce, then add the remaining aubergine. Pour the béchamel evenly over the top and scatter with the remaining 25 g (¼ cup) cheese.
- Bake and rest. Bake at 375°F (190°C), or 350°F (180°C) fan, for 30–35 minutes, until bubbling at the edges and golden on top. If the top browns too quickly, loosely cover it with foil. Rest for 15 minutes before cutting; this helps the layers settle and makes serving easier.
Tips
- Roast the aubergine in a single layer and turn it once. Overlapping slices steam rather than brown, and an overcrowded tray may need an extra batch.
- Use green or brown lentils, which keep their shape. Red lentils break down quickly and can make the sauce pasty; if using them, reduce the stock and simmer only until just tender.
- For a smoother béchamel, add the milk gradually and whisk well between additions. If it becomes lumpy, whisk vigorously or briefly blend it before adding the egg.
- Kefalotyri is a traditional Greek hard cheese but can be difficult to find in UK supermarkets. Mature Cheddar is a practical substitute with a stronger, less salty flavour; taste before adding extra salt.
Serving Suggestions
Serve warm squares with a crisp green salad dressed with lemon and olive oil, or with steamed greens for a simple dinner. Crusty bread is useful for the sauce, while a few olives or sliced cucumber make an easy Mediterranean-style side. The layers are rich, so light, sharply dressed vegetables balance the plate.
Variations
For a vegan version, use olive oil instead of butter and make the white sauce with unsweetened plant milk; finish with a suitable grated vegan cheese, or leave it off. Omit the egg from the sauce and add 1 tbsp (8 g) cornflour mixed with a little cold milk to help it thicken. For extra vegetables, add 150 g (about 1 cup) diced mushrooms with the onion and carrot. You can also replace some aubergine with roasted courgette, though courgette releases more moisture, so roast it until well browned first.
Storage and Reheating
Cool leftovers promptly and refrigerate within 2 hours, covered, for 3–4 days. Reheat individual portions in a microwave until steaming hot throughout, or cover the dish with foil and warm in a 350°F (180°C) oven until hot; USDA FSIS guidance is to reheat leftovers to 165°F (74°C), checked in the centre with a food thermometer. Remove the foil near the end if you want to refresh the browned top. Freeze cooled portions in airtight containers for up to 3 months, then thaw overnight in the refrigerator and reheat to 165°F (74°C). The topping may soften slightly after freezing.
Frequently Asked Questions
Do I need to peel the aubergines?
No. The skin softens during roasting and helps the slices keep their shape. If the aubergines are unusually large or have tough, marked skin, peel a few strips lengthways rather than removing all the skin.
Can I make lentil moussaka ahead?
Yes. Prepare and assemble it up to a day ahead, cover and refrigerate, then bake from cold at the stated temperature. It may need 10–15 extra minutes; check that the centre is thoroughly hot and the top is golden. For best results, add the cheese topping just before baking.
Can I use dried lentils instead of tinned?
Yes. Cook about 100 g (½ cup) dried green or brown lentils separately according to the packet until tender but not mushy, then drain and use in place of the tinned lentils. Cooking times vary by variety, so allow extra time and do not add them dry to the sauce.
Why is my moussaka watery?
The aubergine may not have roasted long enough, or the lentil sauce may be too thin. Roast the slices until tender and browned, simmer the sauce until thick, and avoid skipping the 15-minute rest after baking. That rest lets the sauce and topping settle.
Can I make it without the egg?
Yes. The egg helps the béchamel set, but it is not essential. Leave it out and bake as directed; allow the moussaka to rest for at least 15 minutes, as the topping will be softer and less sliceable.
What size dish should I use?
A deep dish about 23 x 33 cm (9 x 13 inches) gives room for the layers and topping. If your dish is smaller, place it on a baking tray to catch any bubbling sauce and make sure the béchamel is not filled right to the rim.
