Moussaka is a beloved Greek casserole that layers rich, seasoned ground meat, tender eggplant, and a creamy, cheesy topping. This version features a golden, bubbly cheese crust that adds a delightful savory finish to the hearty dish. With its comforting flavors and satisfying textures, it’s a perfect centerpiece for a family dinner or a special gathering.
Ingredients
- 3 large eggplants (about 2.5 lbs / 1.1 kg), sliced into 1/2-inch (1.25 cm) rounds
- Salt, for drawing out moisture
- 1/4 cup (60 ml) olive oil, plus more for brushing
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1.5 lbs (680 g) ground lamb or beef
- 1 can (15 oz / 425 g) crushed tomatoes
- 1/2 cup (120 ml) dry red wine (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
- For the cheese topping:
- 3 cups (720 ml) whole milk
- 1/2 cup (115 g) unsalted butter
- 1/2 cup (60 g) all-purpose flour
- 1 cup (100 g) grated Parmesan cheese
- 1 cup (120 g) grated Kefalotyri or Pecorino Romano cheese
- 2 large eggs, lightly beaten
- 1/4 teaspoon ground nutmeg
- Salt, to taste
Instructions
- Place the eggplant slices in a colander, sprinkle generously with salt, and let sit for 30 minutes. Rinse and pat dry with paper towels.
- Preheat the oven to 375°F (190°C). Brush the eggplant slices with olive oil and arrange them on baking sheets. Roast for 20-25 minutes, until tender and lightly browned. Set aside.
- In a large skillet, heat the 1/4 cup olive oil over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
- Add the ground meat and cook, breaking it up with a spoon, until browned, about 8-10 minutes. Drain any excess fat.
- Stir in the crushed tomatoes, red wine (if using), oregano, cinnamon, and nutmeg. Season with salt and pepper. Simmer for 15 minutes, until thickened. Remove from heat.
- To make the cheese topping, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 2 minutes, stirring constantly. Gradually whisk in the milk and bring to a simmer, whisking until thickened, about 5 minutes.
- Remove the sauce from heat and stir in the Parmesan and Kefalotyri (or Pecorino) until melted. Season with nutmeg and salt. Let cool slightly, then whisk in the beaten eggs.
- Assemble the moussaka: Spread half of the eggplant slices in the bottom of a 9×13-inch (23×33 cm) baking dish. Top with all of the meat sauce. Layer the remaining eggplant slices on top.
- Pour the cheese topping evenly over the top, spreading it to cover completely.
- Bake for 45-50 minutes, until the top is golden brown and the filling is bubbling. Let rest for 15 minutes before serving.
Tips
- Salting the eggplant draws out excess moisture and bitterness, resulting in a firmer texture and better flavor. Don’t skip this step.
- If you prefer a lighter topping, use half milk and half chicken or vegetable broth in the béchamel.
- For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
- Let the moussaka rest after baking; this allows the layers to set and makes serving easier.
Serving Suggestions
Serve moussaka warm, cut into squares, with a fresh Greek salad and crusty bread. It also pairs well with a simple lemon-oregano vinaigrette-dressed greens. For a heartier meal, serve alongside roasted potatoes or rice.
Variations
- Vegetarian: Replace the ground meat with lentils or a mixture of mushrooms and zucchini. Sauté them with the onion and garlic, then proceed as directed.
- Potato layer: Add a layer of thinly sliced, parboiled potatoes at the bottom of the dish for extra heartiness.
- Spicy: Add 1/2 teaspoon of red pepper flakes or a chopped chili to the meat sauce for a kick.
- Cheese swap: If you can’t find Kefalotyri, use a combination of Pecorino Romano and Parmesan, or even a sharp cheddar for a different flavor.
Storage and Reheating
Store leftover moussaka in an airtight container in the refrigerator for up to 4 days. To reheat, place individual portions in the microwave or in a 350°F (175°C) oven for 15-20 minutes, until heated through. The topping may soften slightly upon reheating, but the flavor remains excellent. You can also freeze moussaka for up to 3 months; thaw overnight in the refrigerator before reheating.
Frequently Asked Questions
Can I make moussaka ahead of time? Yes, you can assemble the moussaka completely and refrigerate it unbaked for up to 24 hours. Add about 10 minutes to the baking time if baking from cold.
Why is my topping curdled? Curdling usually happens if the eggs are added to a very hot sauce, or if the sauce is boiled after adding the eggs. Make sure to cool the sauce slightly before whisking in the eggs, and do not let it boil.
Can I use a different meat? Absolutely. Ground beef, lamb, or a mixture of both are traditional. You can also use ground turkey or chicken, but note that the flavor will be milder.
Do I have to peel the eggplant? No, the skin is edible and adds texture. However, if you prefer a smoother texture, you can peel the eggplant before slicing.
Can I grill the eggplant instead of roasting? Yes, grilling the eggplant slices over medium heat for 2-3 minutes per side works well and adds a smoky flavor.
Is moussaka gluten-free? Traditional moussaka contains flour in the topping, but you can easily make it gluten-free by using a gluten-free flour blend. Ensure your other ingredients are certified gluten-free if needed.
