Ninja hard boiled eggs are simply eggs cooked in a Ninja Foodi or other air fryer using the air crisp or bake function. This method uses no water, heats the kitchen less than stovetop boiling, and produces eggs that are easy to peel when finished with an ice bath. The hot circulating air cooks the eggs evenly, and the quick ice bath stops the cooking so the yolks stay creamy and bright yellow.
Ingredients
- 6 large eggs (cold from the refrigerator)
- Ice cubes (enough to fill a medium bowl halfway)
- 4 cups (960 ml) cold water (for the ice bath)
Instructions
- Place the cold eggs in a single layer in the air fryer basket or on the crisper plate of your Ninja Foodi. Do not stack them; leave a little space between each egg so the hot air can circulate.
- Set the Ninja to Air Crisp (or Bake) at 270°F (130°C). Cook for 15 minutes for hard boiled eggs with fully set yolks. For slightly softer yolks, cook for 13 minutes; for jammy, custardy yolks, cook for 11 minutes. (Times are for large eggs straight from the fridge.)
- While the eggs cook, fill a medium bowl with the cold water and add the ice cubes. Set it aside.
- When the timer goes off, use tongs to carefully transfer the hot eggs to the ice bath. Let them sit for 5 minutes to stop the cooking and make the shells easier to peel.
- Gently tap each egg on the counter to crack the shell, then roll it between your hands to loosen the shell. Peel under cool running water, starting at the wider end where the air pocket is.
- Pat the peeled eggs dry with a clean towel. Serve immediately, or store unpeeled in the refrigerator.
Tips
- Use older eggs for easier peeling: Eggs that are a week or two old peel more easily than very fresh ones. If you only have fresh eggs, steaming them in the air fryer still helps, but the ice bath is essential.
- Don’t skip the ice bath: The ice bath stops the carryover cooking. Without it, the yolks will continue to cook and can develop a gray-green ring around the yolk, which is harmless but not as pretty.
- Adjust for egg size: If you use medium or jumbo eggs, adjust the cooking time by 1–2 minutes. Medium eggs need about 13 minutes, jumbo eggs need about 17 minutes for a hard yolk.
- Preheat for even cooking (optional): Some Ninja models preheat quickly. If your model has a preheat function, you can preheat for 3 minutes before adding the eggs. This gives slightly more consistent results, but it’s not required.
Serving Suggestions
Serve these eggs halved with a sprinkle of flaky sea salt and black pepper, or slice them over a green salad. They also make a great high-protein snack on their own, or chopped into egg salad with mayonnaise and a little Dijon mustard. For a classic deviled egg, mash the yolks with mayo, mustard, and a pinch of paprika, then pipe into the whites.
Variations
- Soft boiled: Cook for 9–10 minutes for a runny yolk that’s still set on the outside. Serve in an egg cup with toast soldiers.
- Tea eggs: After peeling, simmer the eggs in soy sauce, black tea, star anise, and a little sugar for 30 minutes, then let them cool in the liquid overnight for a marbled, savory snack.
- Pickled eggs: Peel the cooked eggs and submerge them in a mixture of vinegar, water, sugar, and pickling spices. Refrigerate for at least 3 days before eating. (Always keep pickled eggs refrigerated, never at room temperature.)
Storage and Reheating
Unpeeled hard boiled eggs can be stored in the refrigerator for up to 1 week. Keep them in a covered container or a carton; the shells protect them from absorbing odors. Peeled eggs should be stored in a bowl of cold water in the refrigerator and used within 2 days. Do not freeze hard boiled eggs—the whites become watery and rubbery. To reheat, place the eggs in a bowl of hot (not boiling) water for 5 minutes, or microwave them whole (peeled) for 20 seconds. They are also delicious served cold straight from the fridge.
Frequently Asked Questions
Why are my eggs hard to peel? Fresh eggs have a lower pH, which makes the whites stick to the shell. Using eggs that are a week or two old helps, as does the ice bath. Peeling under running water also helps separate the membrane.
Can I cook eggs in the Ninja Foodi with the pressure cooker function? Yes, you can use the pressure cooker function with 1 cup (240 ml) of water and cook on high for 5 minutes, then quick release and ice bath. But this recipe is for the air fryer function, which is faster and doesn’t require water.
How do I know when they are done? The air fryer method is reliable, but if you’re unsure, remove one egg, cool it quickly in ice water, and cut it open to check the yolk. It should be firm and yellow, not wet or runny. If it’s undercooked, return the remaining eggs to the air fryer for 2 more minutes.
Can I use the air fryer basket or the crisper plate? Both work. If using the basket, make sure the eggs don’t roll around too much; they can crack if they bump into each other. The crisper plate is more stable.
Why do my eggs have a green ring around the yolk? This is caused by overcooking or not cooling the eggs quickly enough. The green ring is a harmless iron-sulfur compound, but it looks unappealing. Stick to the 15-minute cook time and always use the ice bath.
Can I cook more than 6 eggs at once? Yes, as long as they fit in a single layer in your Ninja model. If you cook 8–10 eggs, you may need to add 1–2 minutes to the cook time. Do not stack them.
