Smoked Chicken Lollipops Wrapped in Bacon

Smoked chicken lollipops are the ultimate party appetizer—juicy, tender drumsticks frenched into neat handles, wrapped in smoky bacon, and kissed with barbecue spice. The bacon keeps the meat moist while the smoker infuses everything with deep, woodsy flavor. They’re impressive enough for game day, yet simple enough for a weekend cookout.

Ingredients

  • 12 chicken drumsticks (about 3 lb / 1.4 kg)
  • 12 thin-cut bacon slices (about 12 oz / 340 g)
  • 2 tbsp (30 g) brown sugar
  • 1 tbsp (15 g) smoked paprika
  • 1 tsp (5 g) garlic powder
  • 1 tsp (5 g) onion powder
  • 1 tsp (2 g) black pepper
  • 1 tsp (5 g) salt
  • 1/2 tsp (1 g) cayenne pepper (optional)
  • 1/2 cup (120 ml) barbecue sauce, for brushing
  • Wood chips (hickory, apple, or cherry), soaked in water for 30 minutes

Instructions

  1. Prepare the drumsticks: Using a sharp knife, cut around the thin end of each drumstick just above the knuckle. Scrape the meat and sinew down toward the thick end to expose the bone, creating a “lollipop handle. Trim any excess skin or loose bits. Repeat with all drumsticks.
  2. In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne (if using). Rub the spice mixture all over the meaty parts of the drumsticks, including under the skin if possible. Let sit at room temperature for 20 minutes while you prepare the smoker.
  3. Preheat your smoker to 250°F (121°C). Add the soaked wood chips according to your smoker’s instructions.
  4. Wrap each drumstick with one slice of bacon, starting at the top of the meat and spiraling down to the bone. Tuck the bacon end under the previous wrap to secure it. If needed, use a toothpick to hold the bacon in place.
  5. Place the wrapped drumsticks on the smoker grate, leaving space between them for smoke circulation. Smoke for 1 hour to 1 hour 15 minutes, until the bacon starts to render and the internal temperature of the chicken reaches 165°F (74°C) as measured with a food thermometer inserted into the thickest part of the meat, avoiding the bone.
  6. During the last 15 minutes, brush each lollipop with barbecue sauce. Continue smoking until the sauce is set and the bacon is crisp, about 15 more minutes.
  7. Remove from the smoker and let rest for 5 minutes. Serve warm, with extra sauce on the side if desired.

Tips

  • Frenches the bone properly: Use a small, sharp paring knife and work carefully. If the bone is too slippery, dry it with a paper towel. You can also ask your butcher to french the drumsticks for you.
  • Thin bacon is key: Thick-cut bacon takes longer to crisp and may burn before the chicken is done. If you only have thick-cut, partially cook it in a skillet for 2 minutes per side before wrapping.
  • No smoker? You can roast these in a 375°F (190°C) oven for 40–45 minutes, then finish under the broiler for 2–3 minutes to crisp the bacon. Add a few drops of liquid smoke to the barbecue sauce for a smoky flavor.
  • Keep the handles clean: Wrap the exposed bone in a small piece of foil before smoking to keep it clean and easy to grip. Remove before serving.

Serving Suggestions

Serve these lollipops as a finger-food appetizer with extra barbecue sauce for dipping, or pair them with coleslaw, cornbread, and pickles for a full barbecue dinner. They also work well as a main course alongside grilled vegetables or a fresh green salad.

Variations

  • Spicy Honey Glaze: Replace the barbecue sauce with a mix of 1/4 cup honey, 2 tbsp hot sauce, and 1 tbsp butter.
  • Buffalo Style: After smoking, toss the lollipops in a mixture of melted butter and buffalo hot sauce.
  • Herb and Garlic: Skip the barbecue sauce and brush with a mixture of olive oil, minced garlic, and chopped rosemary during the last 10 minutes.
  • Sweet and Smoky: Add 1 tbsp maple syrup to the barbecue sauce before brushing.

Storage and Reheating

Store leftover lollipops in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a 350°F (177°C) oven for 10–15 minutes, or until heated through. You can also reheat in an air fryer at 350°F (177°C) for 5–7 minutes to restore crispness. Freeze cooked lollipops for up to 2 months; thaw overnight in the refrigerator before reheating.

Frequently Asked Questions

Can I use chicken wings instead of drumsticks? Yes, but wings cook faster and have less meat. Reduce smoking time to 45–50 minutes and check for doneness at 165°F (74°C).

Do I need to brine the chicken? Brining is optional. The bacon and smoke keep the meat moist, but if you have time, soak the drumsticks in a simple saltwater brine (1/4 cup salt per 4 cups water) for 2 hours before seasoning.

What wood chips work best? Hickory gives a strong, classic barbecue flavor; apple or cherry are milder and slightly sweet. All work well with chicken.

Can I make these ahead of time? Yes, you can smoke them fully, then refrigerate for up to a day. Reheat in a 350°F (177°C) oven for 15 minutes, then brush with extra sauce if desired.

Why did my bacon burn? If your smoker runs hot or the bacon is too close to the heat, it can burn before the chicken is done. Keep the temperature steady at 250°F (121°C) and use thin bacon. You can also wrap the lollipops in foil for the first 30 minutes, then remove to crisp.

Can I cook these on a gas grill? Yes, set up your gas grill for indirect cooking at 250°F (121°C) and add a smoker box or a foil packet of soaked wood chips. Follow the same instructions.
