Super Easy Meal Prep Recipes for Busy Weeks

Meal prepping doesn’t have to mean spending hours in the kitchen or eating the same boring thing every day. These super easy recipes are designed to be flexible, forgiving, and perfect for batch cooking on a Sunday, so you have ready-to-go lunches or dinners all week. With simple ingredients and straightforward steps, you’ll save time, reduce stress, and actually enjoy your homemade meals.

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts
  • 2 tbsp (30 ml) olive oil, divided
  • 1 tsp (5 g) garlic powder
  • 1 tsp (5 g) smoked paprika
  • 1 tsp (5 g) ground cumin
  • 1 tsp (5 g) salt, plus more to taste
  • 1/2 tsp (2 g) black pepper
  • 1 cup (185 g) uncooked quinoa, rinsed
  • 2 cups (475 ml) water or low-sodium chicken broth
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 cup (150 g) cucumber, diced
  • 1/2 cup (75 g) crumbled feta cheese (optional)
  • 1/4 cup (60 ml) lemon juice
  • 2 tbsp (30 ml) extra-virgin olive oil
  • 1 tbsp (15 ml) honey
  • 1 tsp (5 g) Dijon mustard
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry with paper towels. In a small bowl, mix garlic powder, smoked paprika, cumin, salt, and pepper. Rub the spice mixture evenly over both sides of the chicken.
  3. Heat 1 tablespoon (15 ml) of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side, until golden brown (the chicken will not be cooked through yet). Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) checked with a food thermometer. Remove from oven and let rest for 5 minutes before slicing.
  4. While the chicken bakes, rinse the quinoa under cold water in a fine-mesh strainer. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  5. In a small jar or bowl, whisk together the lemon juice, extra-virgin olive oil, honey, and Dijon mustard. Season with a pinch of salt and pepper.
  6. Once the chicken has rested, slice it into strips. Divide the cooked quinoa among four meal-prep containers. Top with sliced chicken, cherry tomatoes, cucumber, and feta (if using). Drizzle each container with the lemon-honey dressing. Garnish with fresh parsley if desired.
  7. Seal the containers and refrigerate for up to 4 days, or freeze for longer storage (see notes).

Tips

  • Use chicken thighs instead: Boneless, skinless thighs are more forgiving and stay juicy; cook them to the same 165°F (74°C) safe minimum.
  • Keep dressing separate: If you’re prepping more than 2 days ahead, store the dressing in a small separate container and add it just before eating to keep the salad fresh.
  • Don’t overcook the chicken: Use a meat thermometer to avoid dry chicken. Resting the meat after baking is essential for juiciness.
  • Make it vegetarian: Swap the chicken for a can of drained chickpeas (no need to cook them) or cubed tofu; if using tofu, press and bake at 400°F (200°C) for 20 minutes.

Serving Suggestions

These meal prep bowls are a complete meal on their own, but you can add a side of warm pita bread, a handful of baby spinach, or a spoonful of hummus for extra flavor. For a heartier dinner, serve with roasted vegetables like zucchini or bell peppers.

Variations

  • Greek-style: Add chopped Kalamata olives, red onion, and oregano to the mix.
  • Southwest: Replace the quinoa with brown rice, add black beans, corn, and a squeeze of lime; use chili powder instead of paprika.
  • Low-carb: Use cauliflower rice instead of quinoa and increase the cucumber and tomatoes.
  • Dairy-free: Omit the feta or use a plant-based crumble.

Storage and Reheating

Store the assembled containers in the refrigerator for up to 4 days. The quinoa and chicken will stay fresh, but the cucumber may soften slightly. For longer storage, freeze the containers (without the dressing and fresh tomatoes) for up to 2 months; thaw overnight in the fridge. To reheat, microwave on high for 2–3 minutes, or until heated through to 165°F (74°C) for leftovers. If you prefer a cold lunch, you can skip reheating entirely.

Frequently Asked Questions

Can I use rotisserie chicken to save time? Absolutely. Shred the meat from a store-bought rotisserie chicken and skip the baking step. Just make sure to remove the skin and bones. The chicken is already cooked, so you can add it directly to the bowls.

How long do these meal prep bowls last in the fridge? They will keep for 3–4 days in an airtight container. The cucumber may lose some crunch after day 2, but the flavors will still be great. Always check for any off smells or signs of spoilage before eating.

Can I use a different grain? Yes, farro, bulgur, or couscous all work well. Adjust the cooking time according to the package instructions. Brown rice takes longer, so you might want to cook it in advance.

Is it safe to freeze these bowls? Yes, but freeze them without the dressing, tomatoes, and feta. The texture of the chicken and quinoa will be fine for up to 2 months. Thaw in the refrigerator overnight and reheat thoroughly.

What if I don’t have smoked paprika? You can use regular paprika or add a pinch of cayenne for heat. The flavor will be slightly different but still delicious.

Can I meal prep this for the whole week (5 days)? For food safety, we recommend consuming within 4 days. If you want to prep for 5 days, freeze the portions for days 4 and 5, and move them to the fridge the night before you plan to eat them.
